Mornings are usually a blur for me these days as I’m usually awake most of the night with Baby Max! So usually I just reach for whatever is fast and yummy – thankfully Wesley’s Wholesale imports a few different items that have made my mornings a bit easier and still very healthy!
The first thing that I discovered is a brand called Barbara’s that makes this amazing “Better Granola”, Dark Chocolate Cranberry. Made with ingredients like flax, chia, quinoa, amaranth, and loads of other super ingredients it truly is Better Granola! Barbara’s is sweet – but it doesn’t have as much sugars/carbs in it as the brand of granola we used to keep in the house. The dark chocolate swirls are 70% dark which a true chocolate lover can really appreciate. If any of you follow me on Snapchat (@pearlmaalouf) you would know I LOVE pancakes, I’ve even posted about it on here before as well. But now that Max is here I needed something a bit quicker to get the job done in the mornings.
Wesley’s imports a flapjack/waffle mix called Kodiak cakes that taste just like regular pancakes! All you have to do is add water to the mix and cook them up! But of course as you all know, even with a baby in tow I still wanted to spice up the pre-made mix, so I’ll share with you how I like to add my own flair (and extra protein for Robert!).

Fun things I like to add in are: 1/2 tsp of Tone’s Cinnamon (also from Wesley’s!), 1/2 tsp of cocoa powder, 1 scoop of chocolate protein powder, a few shakes of the Himalayan pink salt, 1 mashed banana, 1/2 oz (14g) of nuts, or 1/2 tsp vanilla extract. You can choose to add in multiple items from this list to really make the mix customized or just one item!
For Robert’s super protein pancakes I mix in a full scoop of protein and three whole eggs. I then add in 1/4 cup water and a mashed banana – mix it all up and it makes really thick pancakes that will fill you up for hours.
Of course you can’t have pancakes without a fun topping! But forget about syrup, for a nice healthy, well-rounded breakfast we need to include some fruits! On mornings where I’m going all out I will make my own caramelized peaches to use as a topping, BUT since I discovered something called “coulis” – is a form of thick sauce made from puréed and strained fruits – that has been my choice for pancake toppings!
