Chocolate Coconut Cake

This is a DARK chocolate lovers dream cake! It is so rich and warming. Serving it with some pomogranate seeds and a scoop of vanilla ice cream is a perfect way to add color and cut the richness of the chocolate. So whip up this cake for your fellow chocolate lovers and wow them!


125g bananas mashed
70g unsweetened shredded coconut or coconut flour
80g oat flour
70g dark muscavado sugar or coconut sugar
30g chocolate protein powder
70g cacao powder
1 tbsp baking powder
1 tsp baking soda
3 tbsp chia seeds
9 tbsp water
80ml coconut oil


Preheat oven to 180C and grease loaf pan or line with parchment paper. Place bananas and shredded coconut in blender and puree. If using coconut flour then you can skip this step. Mix all ingredients together and pour in to loaf pan.
Bake in for 30 min or until knife enter into the center of cake comes out clean.
Serve with pomogrante seeds springkled on top and a side of vanilla ice cream if desired.
