Healthy Fiesta – Lettuce Tacos – With Wesley’s Wholesale

This past weekend was the grand opening of the biggest Wesley’s Wholesale location in Hazmieh, Lebanon! And when we say big….we mean BIG! It’s two huge floors (soon to be three!) of imported American products ranging from storage, cooking, cleaning, baby, personal care, and tons of food products! I loved hanging out with Farrah Berrou and checking out all the products they have to offer. It’s open to the public now and has a really convenient location right off the highway near Beirut City Centre! Check out the sizes of those spice bottles! I browned a small red onion and 4 cloves of garlic, then added in 1 kg of ground beef with these spices:
4 turns of the pink salt (about 1 tsp)
1/2 tsp Paprika
1 1/2 tsp Ground Cumin
1 tsp. Black Pepper

For an added kick you can add in 1 tbsp chili powder. Since I’m all about the veggies, after I cooked up the meat I divided it in half. In one half of the meat I added in a cup of steamed spinach – you don’t taste it but it sneaks in extra fiber and volume so you get fuller faster!

Next up is my Fiesta Refried Beans! Refried beans is what holds the taco together and it always seems to be the first thing to finish at every gathering! This brand of Pacific Organic Refried Black Beans comes spiced already and tastes amazing but since I had the time I decided to take it to the next level – it’s totally not necessary to do so though!

I added in some chopped garlic, cilantro, and a few tablespoons of salsa! Heat it all up right before serving, it only takes a few minutes – be careful as the edges might dry/burn if left for too long!

Layer all of your ingredients as you like inside a leaf of iceburg lettuce. You can even sprinkle a bit of shredded skim mozzarella cheese or jalepenos for some added flavor!

What I LOVE about this dish is that is seriously SO good and yet SO healthy that you can indulge in a fun and unique dessert and not even worry about your calories! This Sweet Corn Cake is a crumbly and delicious way to end your meal. As you can see in the background I used parchment/wax paper to line my pan instead of oil – another calorie saving tip! 🙂 PicMonkey Image
