Healthy Holiday Recipe Guide!

I recently hosted a healthy and YUMMY holiday lunch for my family and thought it would be great to share some of the recipes I used so you can recreate it for your families!

Soups

There’s nothing like hot soup ready to greet and warm your guests as they arrive! Make vegetable based soups the star this year by serving up a yummy carrot and leek soup or roasted cauliflower and fennel soup!

Sides

Beans and peas galore! Growing up a holiday meal just wasn’t complete without a heaping plate of green beans and peas, although now I prefer to skip the butter and add just a touch of coconut oil to cook the onions and garlic and then add water to steam the actual beans and peas.
If you’re offering rice as a side dish adding nuts and raisins is a popular way to transform rice into something spectacular. But when it comes to cutting calories this lemon ginger basmati rice that I got from Food Network. It was light and refreshing to eat accompanied with the green beans!

Turkey/Chicken

This year you’re going to want to skip the gravy, trust me! Not just for the calories but also I have a secret (well it’s not really a secret) to cooking a JUICY turkey! Brining is a super simple and easy way to lock in flavor and moisture in your turkey (or even chicken!). If you’re buying a frozen turkey then you have to let it thaw in the refrigerator for a few days, while this is happening you can soak it in a salt solution. The popular belief is that the salt helps break down the tough fibers in the turkey meat softening up the tissue and making it moist when cooked. You can choose to do either a wet brine or a dry brine, I’ve had success with both ways so it’s up to you which one you choose. Dessert
