Sun-Dried Tomato Truffle Pasta RECIPE – Living La Dolce Vita with Wesley’s Wholesale

In a new partnership with Wesley, each month we’re going to be featuring a few items that can only be found at Wesley’s and creating fun, easy, yummy, and healthy recipes for you! This month’s theme was “La Dolce Vita” – with three products all made with great ingredients.

If you’re looking to sneak some vegetables into you and your families diet without them noticing this pasta sauce and noodle combination is key. I took it a step further and added in my own fresh basil, celery, spinach, mushrooms, and some ground meat to make it a really hearty yet light dish. I wanted the flavors of the sauce, spaghetti and sundried tomatoes to shine so I didn’t add any onions/garlic or even any salt or pepper! Sun-Dried Tomato Truffle Pasta RECIPE

Ingredients:

  • 1/2 cup chopped Via Rafi sun dried tomatoes
  • 1 1/2 cup Victoria Organic Garden Herb Marinera
  • 1 handful Verrigini truffle pasta
  • 1/2 kg ground beef
  • 1 cup chopped fresh spinach
  • 1 cup chopped mushrooms
  • 1/2 cup chopped celery
  • Seasonings to taste

Instructions:

  1. Bring a large pot of lightly salted water to a boil. Place pasta in the pot, cook according to package directions, and drain.
  2. In another pot add in olive oil and brown the ground beef. If you are adding in any seasonings throw them in while the meat is cooking.
  3. Add in Marinara sauce and celery, and reduce heat to medium.
  4. Once it’s starting to bubble add mushrooms, spinach, and sun dried tomatoes. At this point I added in fresh basil leaves.
  5. Once spinach is wilted remove from heat and serve.
  6. Top with fresh basil, cracked pepper, or Parmesan cheese!final2
